Chocolate Avocado Ice Cream (Low Carb High Fat)

Chocolate Avocado Ice Cream!

With all this hot weather, it has kept me out of the kitchen, at least in a baking sense.  I have been avoiding putting the AC on, so for a cool treat this afternoon I whipped up some Chocolate Avocado Ice Cream… or my version of it. Sometimes when I make this it is more of a meal replacement so I like to add in my greens and a little extra protein too, but you would never know from the taste.

Today was a mixture of a little coconut milk, about ¾’s of an avocado, raw cacao powder, sunwarrior protein powder, spirulina, spinach, stevia, and ice. Depending on the thickness of the mixture I sometimes have to add a splash or two of almond milk or water to get it blending. This is the final product... and yes that cup does look like a waffle cone, some how it makes it even better.

Soooo refreshing! And it's low on carbs and high in good healthy fats. But if you are simply looking for a treat after a meal, just whip together some avocado, cacao powder, stevia or honey with some ice and it's just as delicious!

On a side note I have recently switched over my skin cream and have been using this amazing citrus body butter by “AbundantYou.” It is locally made here in Collingwood and has a very short ingredients list! All the better for our skin. So if you have been hunting for that perfect cream this is the one to try out, just saying.
