As sad as it is to say, the summer season is starting to slip away. The cool nights have started but luckily the days are staying nice and hot! I was looking for a refreshing treat and found one I haven’t made in a loooong time. It is the perfect substitute for those days you are wishing you had some ice cream.
WHOOOOOPIESSSS! They are so tasty and simple.
*In the original recipe I used Greek yogurt, but I no longer eat much dairy so I made a sub.
Take ½ cup of any nut butter of your liking, peanut butter, almond butter etc. Then mix it with ½ cup of Greek yogurt (in this batch I used a vanilla almond yogurt I found, as another suggestion, coconut cream would work as well). Then, add a bit of honey to your liking and toss in some mini chocolate chips. Mix ingredients together and then top your choice of paleo wafers/cookies with the nut mixture. Top again with a second wafer/cookie and then freeze for at least an hour.
