Almond Butter Truffles

Merry Christmas!



 It’s that time...family fun and lots of eats and treats. Wishing everyone an awesome Christmas with lots of love and laughs!


These are yummy little truffles I made up to have on hand over the holidays, if you are looking for something easy because you’re doing that last minute scramble these are perfect.

Almond Butter Truffles:
1 cup almond butter (or peanut butter/or other nut butter of choice)
¼ cup honey (you can also sub maple syrup for a little different flavour)
¼- ½ cup coconut flour
Splash of vanilla
1 cup dark chocolate
2 tsp coconut oil



Mix the almond butter with the honey and splash of vanilla. Then slowly add in the coconut flour a bit at a time until it makes a dough. Roll the dough into bite size balls and place them on wax paper on a cookie sheet and freeze for about 20 minutes.  Once the balls have hardened in the freezer, melt the chocolate and coconut oil over a double boiler and roll the balls in the chocolate until completed coated and place them back on the cookie sheet. Put them back in the freezer to set and your all done.

Tip: I use a toothpick to pick up the balls and roll them in the chocolate to ensure the whole ball gets coated nicely.
