Nut Butter Bites

Gratitude

Here is a little thought to keep in mind as we move forward in the New Year. Life can get so busy and stressful that we unknowingly take for granted all the amazing things that are in our life daily. Try to be thankful for what you have today because it may not be the same tomorrow.  Remember that someone somewhere will never forget today for the good or the bad. So reach out to someone you miss, say hello to that person on the street and always hug your family when you get home.

Today’s treat is a hodge podge of a recipe. The initial recipe I started with was from Living Healthy with Chocolate- “Peanut” ButterTruffles. I didn’t want all the chocolate so I modified a few things.


Nut Butter Bites
¾ cup almond butter
1/3 cup sunflower butter
½ tbsp your choice of sweetener (honey, maple syrup, xylitol)
2 tsp vanilla                                        
2 tbsp flax seed
1 tbsp coconut oil
1/3 cup coconut flour
Pinch of sea salt
Handful of dark chocolate chips
Chia seeds for sprinkling




Mix all of the ingredients together except the chia seeds. Line a cookie sheet with some wax paper. Then with a teaspoon, scoop the dough out and plop it on the cookie sheet into little mounds. Sprinkle with chia seeds or another topping of your choice and place them in the freezer to firm and enjoy.
