Breakfast on the Go
Time sure flies! Turkey weekend has been and gone and before
you know it kids will be saying, “trick or treat!” Ok but for now it is time to
get back on track with those healthy snacks and treats. I guess really it was
time to get back on track on Tuesday, so I may be a day or two late but now is
better than never.
The last few weeks I have been playing with a
yummy breakfast cookie creating a new mix n’ match each week. With early
morning wake up calls for work I was aiming for something simple and easy to
grab and go. I have also been trying to reduce the amount of eggs in my diet, don’t
get me wrong I LOVE eggs, they just don’t always seem to like me. So, for any
of you that have an allergy or just don’t like eggs, you will be happy to hear
these cookies are egg free!!! This week I’ve got a mix of coconut flour, chia
seeds, flax, dried blueberries, almonds, and some protein boosting hemp seeds.
They are so tasty definitely one of my favourite batches.

Fun Fact of the Week:
This week’s fact or tip is not food related at all, it is more a positive
encouragement. I was listening to a podcast today about following your dreams
and pursuing whatever it is you want to do in life. One of the quotes they said
was, “be like a stamp and stick to one
thing until you get there.” I think this is the best quote. It is so true!
Too many times we start doing things but because we don’t see progress right
away we jump ship on our dreams. So listen to the quote and reach for what you
really want to do in life because we all have a little bit of wonderful in us
and can achieve anything we want to.
