Paleo Sandwich Bread

G-Free and Paleo Bread

This week I had a chance to catch up on some things around the house which then led to more play time in the kitchen. I actually had originally told myself to stay out of the kitchen because it was such a nice day but instead I just fit it all in.

I wanted to get creative and step outside of my comfort zone by making something I do not usually make, and today I found it. Paleo Sandwich Bread! And for fun I thought I would try duck eggs instead of normal hen eggs. Yes DUCK EGGS! They are about double the size of normal hen eggs. They are like eggs that workout! The good news is the bread actually turned out, duck eggs and all. What I thought was going to be a scary task was quite simple and took less than an hour. I even added some sunflower seeds on top to make it look extra fancy. Don't be afraid to try new things, worse case scenario you throw it out and try again. 

 I also was able to get out and enjoy the beautiful sunny day! I decided to go for a run and I came to the realization that I am a trail runner and not a road runner, beep beep. The thought of running on pavement has never made me want to run, but as soon as I hit some of the trails it was completely different. I was having fun, full of energy and wanted to keep going forever. Unfortunately my knees after a winter of no running didn't quite let me go forever, but when I got home I felt completely refreshed. Getting out in the fresh air and doing something you love really does make a big difference. You can recharge, refocus and get a different perspective on life.
