Veggie Pancakes!

Happy Wednesday everyone, half way through the week already! This has been a week of productivity. The nice weather has given me a kick in the butt to start getting some stuff done, spring cleaning, yard work and painting. Although things keep getting checked off the list somehow more things keep getting added, but it keeps for a busy full day so I am not complaining!

I was tinkering away in the kitchen and forgot about these delicious VEGGIE PANCAKES I used to make all the time. Ok really they are fritters, but I like to call them pancakes because I feel like I am getting a treat. They are the perfect go to breakfast, or snack. This time I mixed shredded zucchini, carrots and sweet potato. Mix in a couple eggs with some almond flour and you're set. The best thing about these is you can add in whatever you want.  If you are looking for a higher carb post workout snack you could make it just with sweet potato to get those carbs in fast for recovery. Either way they are great and I highly recommend you try them out.


There really is no set recipe I use, so you will have to be adventurous. Shred up one carrot, one zucchini, half of a sweet potato or maybe the full thing. Next, add in as many eggs to fully coat all the veggies, with this amount I would use three to four. Lastly mix in some almond flour to help bind everything, add a ¼ cup at a time until you are happy with the consistency. To jazz these up even more you can add spices to your liking. In the past I have added cinnamon and nutmeg or a little chili powder and paprika.
