Attitude of Gratitude
Sometimes we all need that friendly reminder of what we
should be thankful for. The other morning I woke up tired and not myself, you
can say I was even grumpy. Of course the day just didn’t start right. Moving
some items around in the washroom I had a picture come crashing down and break.
This I can tell you did not make things any better. Then a few moments later in the kitchen, I
knocked a glass of water over everywhere. Now it was something as small as
these little upsets that I said to myself why I am getting so mad. I started to laugh at myself because I
clearly was not in the right head space. I cleaned up the picture, wiped up the
water and started thinking what I was grateful for. I put on some music and my
whole day turned around. Don’t let the little things get you down, and if they
do, catch it, accept it, and move on with a smile.
And to keep that smile today, I made some Birthday Paleo Cupcakes
for Mike. No I didn't forget his Birthday earlier this week, tonight is just
family dinner night!

I baked them, then cut them in half and
added icing in the middle AND on top, soooo tasty. I made a cashew vanilla
icing for them. The recipe is easy and delicious:
1 cup unsalted cashews
2 tablespoons coconut oil
3 tablespoons honey
2 teaspoons of vanilla
¼ teaspoon sea salt
Take the unsalted cashews and soak them in water for 2-3
hours. When that is finished mix all ingredients in a food processor or
blender. If it gets too thick just add a bit of water as you go to get the consistency
you would like and you’re done! Ice and Enjoy!
