Cookie Dough Date Bites

Change for the Better

Well it’s been a fun few days. I have been participating in our CrossFit Mozomo’s:  21 Day-Back on Track Challenge and it’s been awesome. Today is day 6 and already I am noticing a big difference in how I feel. It could be the extra workouts I have been fitting in but most importantly I think it is being so aware of what I am putting in my mouth… no processed foods at all! So guess what? Things like mayo not happening. Ketchup on a lettuce burger?  NOPE. Chocolate chips even 70 %? NO! 

Don’t worry there is the option to have a cheat meal or treat once a week but eating so clean, you don't really want to.

Today I played with a recipe I had for Paleo Cookie Dough Bites. BUT, the original recipe I use has chocolate chips. So to avoid the processed chocolate chips, I subbed in some fresh medjool dates! The dates are so sweet on their own I ended up cutting the honey from the recipe as well .

Cookie Dough Date Bites:
3-4 tbsp of coconut oil (melted down)
2 tbsp coconut milk
1 tsp vanilla
½ cup almond flour
1 tbsp ground flax seed
4 medjool dates chopped


Mix the coconut oil, coconut milk, and vanilla together in a small bowl. In a separate bowl mix the almond flour and ground flax together. Then add in the dates to the flour mixture to coat them so they don’t all stick to one another.  Add the dry to the wet and stir together.  Roll into bite size balls and place in the fridge or store them in the freezer if you are hoping to make them last longer. But they are so tasty I doubt they will last! If you don’t find them sweet enough you can add in some honey or maple syrup, about 1-2 tsp’s.
